As I’ve mentioned before, Erica Van Driel and Sami Rix make some great vegan cookies. For the last little while, the folks behind Vancouver’s In the Oven bakery have been hard at work perfecting their newest product line.

This weekend, they launched Caramels by In the Oven at the Baker’s Market and the Hawkers Market. On The Vegan Project, the bakers note the caramels are vegan, gluten-free, and GMO-free. The main ingredients are organic cane sugar, coconut milk, agave syrup, and coconut oil.

There are five flavours so far: coconut, dark chocolate coffee, lime, maple pecan, and smoked salt. Since they’re taking suggestions, I’m just going to put the idea of coconut bacon caramels out there.

In the Oven will return to the Baker’s Market, which takes place at the Moberly Arts & Cultural Centre (7646 Prince Albert Street) in East Vancouver’s Sunset neighbourhood, on April 6 and 13, and May 4. Online sales are planned as well.
